Goose jerky

I find myself in possession of a couple dozen snow goose breasticles. I am thinking jerky. I have a tried and true venison jerky recipe. Do I just use that? Anything I should do differently? My recipe is a pretty standard soy sauce, wochestershire, liquid smoke, and various dry spices marinade. then I dry on racks in the oven at the lowest temp and the door cracked open.

Any tips, tricks or advice would be greatly appreciated.

You might add a little molasses to the marinade for a slightly sweeter flavor.

Go get some High Mountain Jerky Mix and follow directions. It will taste great,

I agree! I had people eating goose jerky that had never eaten goose before and they loved it. It's easy and predictable.

I used the same as i do for deer. The g-kids like the duck/goose better along with several other folks. Your cure sounds a lot like the one I use.
