Have A Heart.............

Do most or all of you folks leave the heart and liver in the gut pile ? If so, Yer missin out on some fine grazin'.

Sauteed heart is damn good, and my dog thinks the deer liver is the end all.

The coyotes are welcome to kidneys, intestines and azzholes, but not the choice parts.

I have heard about cooking the heart and want to try it. I have read some of Steven Rinnella's books and enjoy watching his show Meateater. He is an outdoorsman and a chef. He shows cleaning the fish and game he gets and cooks some of it on about every show. He always says that the heart and tongue from any big game animals are some of the best cuts of meat on them and 99% of people throw them away.

He's right.

This is the first deer in a few years that had an intact heart. Steep downhill shot, bullet went about an inch over the heart. I smiled as I dressed her.

No beating the catfish loins, and the backstraps are next in line. The heart is the third best muscle meat the deer has to offer.

Almost makes a dude want to be a neck shot purist.

I leave them with the other guts, but I'm no cook.

I know a guy who will gut your deer for you, if he can have the heart. He gets excited about it.

Dry rubbed and smoked. Along with the tongue. Parboil and remove the skin from the tongue first.

Not bragging,but being a chef,I've dealt with organs and offal more than most.
No way is the heart or tongue the best part.Takes some experience,but you can make anything edible,even good.

Slap on some sauce and a french name,and it sounds exotic,and people will pay a lot for it.

I can eat pizza every saturday and never get tired of it,even a cold slice for breakfast.Every week.
A cold boiled tongue sandwich,liver and onions,smothered thymus gland,brains and scrambled eggs..once every 5 years is fine with me.

Jon, a cooking pedigree doesn't mean your opinion carries any more weight than mine when it comes to personal preference. And I sure as hell didn't say anything about sauces or French monikers.

Go back and read my post. I never said heart was the best part of an animal. But, thin sliced heart sauteed in butter with minimal seasoning is damn fine fare.

Have an extra slice of cold pizza and get back to me in five years.

Sliced into about 1/2” slices. Then soak in milk for a couple hours. Double dredge into flour, your favorite spices and fry the slices.

Make into sandwiches with pepper jack cheese, sliced onion, a slice of tomato and mayonnaise- few sprinkles of Louisiana hot sauce...

Its the internet,not a FTF conversation.Somehow you took what I posted to mean something other than what I meant,happens all the time.

Everyone has a personal preference,I've killed,dressed,and ate deer heart several times.It can be good or tough,just depends.

I get it, man. Internet conversations lack visual signs and inflection, so are easily misinterpreted.

I agreed that 99 % of folks leave the best innards on the forest floor. Sad but true.

I don't doubt your experience or culinary ability. But, I'll keep eating the innards.
