Pancho's in Blue Springs

Little Mexican joint on the South side of 40 just West of 7 highway.
They make a killer shrimp burrito.
Starts with a grilled flour tortilla. First layer on it is creamy cole slaw. Then it is covered with plenty of tender grilled shrimp smothered in a SW Chipotle ranch sauce. Then topped with grilled onions, green peppers, jalepenos and tomatoes.
The damn thing weighs about 2 pounds and is a 4 napkin affair but damn it is good.
Always done the drive through...dine in area is pretty small.

Have you seen the stories in the last month about the interstate shootings and the hate crime murders in the KC area...anywhere with an oxygen air percentage of 21 percent is Kevlar zone these days
I guess you could say it could be good enough to die for!
