I know, wrong forum. But I'm putting this here anyway. I have a bunch of Chinook and Coho that I need to smoke and cure. Anyone have any good recipes? Found a bunch already but wanted to ask here, too. Mostly interested in cures that do not require cooking, but would like to hear any other ideas.

Mix five parts brown sugar to one part noniodized salt. Cover filets about a quarter of an inch with the mixture. Drizzle liberally with honey. Put in fridge overnight. The 3 ingredients magically turn into the best brine you will get.Rinse salmon lightly .Dry salmon for 4 or 5 hours. Smoke at 200 for 3 hours.

I've tried them all in the last 30 yeras and this is my fave by far. I smoke about 80 pounds a year.

After eating bubba's smoked salmon recipe........there is no other to worry about. I don't like smoked salmon very much, but can eat that recipe for hours. Great stuff

Do you cut the filet or score it through the meat just to the skin before adding the rub?

that's a helluvan endorsement from Dog... sounds freakin awesome.. gonna buy a salmon side and make some (gawd that sounds sad... buy a salmon...)

Muggs , I filet the fish then cut the filets into strips about 1.5 inches wide. You can do it without cutting into strips but I find the brine/flavor covers the fish more if stripped.

Charlie, thanks... I can't go... gonna go watch a bigass footrace Sunday and got bookins the next five weekends solid. Which takes us into duck season and the sammins will be all spawned out I'm afraid.

Charlie, you ever just go up there and freelance? Only steelhead I've ever done was on the Deschutes. It was a brutal learning experience. Follows and boils, only, no takers.
