UDS - need a drum - now after pics
      #228821 - 05/08/12 08:10 PM

I have been advised by a friend who makes money in those bbq competitions that the best thing to fit my needs is an ugly drum smoker.

So I am gonna make one and try it.

I need a 55 gallon drum, food grade, with removeable lid. They're on craigslist, but I thought I'd ask here if anyone has one.

In addition, if you have an old 22.5" weber grill you want to give away, let me know.

Also, if your around St. Charles county and want to build a UDS, your welcome to come out to my place and build mine too, or we could build em at the same time, I have all the tools and some of the materials sitting around. It might be a month before I get to it, I dunno.

Well my hook up for a food grade drum fell through, so I bought a "second" from a place that makes them here in STL, so its a new drum. I seasoned it last night, it was easy to make it hold 270, I didn't try to take it down from there yet. I got it hot last night.

A buddy that is successful in those competitions gave me a rub recipe and some direction, gonna put some pork butts on for some friends coming over Sunday. I am pretty happy with how it turned out:

I put mine on at 12:20 last night, I fell asleep, some might say passed out, outside for quite awhile last night. I like sleeping under the stars!!

Anyway, at around 630 this morning mine had an internal temp of 180, I pulled em, wrapped in foil and added a couple things, put back on until internal 205. They were done and sitting in a heated cooler by 8:20am. They tasted perfect, I am very happy for my first time slow cooking anything besides jerky.

Here they are before wrapping this AM. The flames in the pic are cause I had the top off the smoker, it flamed up with the extra air, put the lid on and it stops pretty quick.

Looks good pal! Both the smoker and the meat.

If you know anyone who wants to buy a cord of seasoned apple wood let me know. I've got some.

Thanks, a cord? Thats a lotta smokin.

People were eating the pulled pork tonight without sauce, it was that good. I am pretty happy with it all, but I made twice as much as I needed for 20 people!

I love doing butts because there are so many good variations to choose from. You can change the smoke, injection, or rub and bring something new to the table.
