warming up right now?
about 8 sticks of oak burning for coal and some apple waiting.
corned beef brisket, whole chicken, chicken quarters and some other fowl will be on the menu tonight. Damn I haie working non-traditional hours

I stoked mine up last night with some pecan wood and flash grilled the last goat tenderloins and fishloins that brined for a long period in a homemade concoction and two pork loins.
Then moved them over and let them slow cook for about 2 hours.
but.....CORNED beef brisket???????  uke:

probably one of the finest cuts out there to smoke. You don't have to worry about it getting dry like a real brisket can if not tended too. Nice brined piece of meat. If you like corned beef or pastrami type meats smoked corned beef is the BOMB!!!!!!!!!
I would not lie about smoked foods

Dr. Atkins would be proud of this snack. Smoked skinless duckbreasts cut about 1/2" thick. 2% extra sharp cheddda cheese. All vaccum sealed and in the freezer for hunting this season. It is going to suck

I done smoked up 20 goose breast about 2 weeks ago. Somone gave them to me of course. I have maybe 5 left. 
I think vaccume sealing them right off the smoker might be a good trick rather than waiting for them to cool. That has been my expierence anyway.
Also, appled didn't seem to produce near the flavor that mesquite or hickory does. Matter of fact, it reminded me of smoking river willows.  The dog liked em' though.

duko I held on the apple today the oak was smoking nicely when the meat went on so no need for it.

That looks about right. 5 packages of duck/cheese to go along with your 5 hunts this season.
Make sure and bring one of 'em with ya in December.

Hope it will be all gone come Dec. but I'll have something for us. At least you can count on a good dinner the night befo' and a comfy couch to sleep on
